Healthy Recipe: Cheesy Salsa Spirals

Saturday afternoon. I wanted to bake something. Like really really bake and not roast or grill. You know what I mean? Stuff that involves flour, sugar, eggs…you get the drift? But, this baking craving went totally against my resolve for the month (Psst. I did decide to not bake anything sweet this month). What was worse, I told M about my resolution. So I knew that he would be grinning from ear to ear if he saw me pottering about the kitchen with my mixing bowl and wooden spoon. Arrgghh!!

So, this is what I came up with. Not so cheesy salsa spirals. Oh yes, they are definitely not so cheesy, but if I had named them that, you wouldn’t have wanted to come and look it up now, would you? 😀 It’s ok, I wouldn’t have either. Back to the spirals, all you will need is whole wheat flour, dry yeast, tomatoes, ketchup, herbs and some cheese. That’s it. How long does it take to make this? A total of about two hours. But from that time 30-40 min is the baking time and another 40 minutes is the time that you will just sit and wait and watch the spirals rise (like that for bread). So the actual work bit is only 20 min. At the end of it all, you get side dish which will wow everyone and coupled with soup and salad will actually make an entire meal!

You will need:
200 g whole wheat flour
50 g all purpose flour
1 tsp active dry yeast
1 tsp sugar
2 tomatoes, finely chopped
1 tsp dried/ fresh herbs
2 tbsp grated cheese (cheddar/mozzarella/gruyere)
3 tbsp tomato ketchup
1 tbsp olive oil
150 ml water
Salt and pepper to taste

Slightly warm the water and add the yeast and sugar to it, cover and keep aside for 15 min.
Take the flours in a bowl and add the yeast mixture to it and mix well. Combine and knead it to make a soft dough.
Dust a work surface with some flour and roll out a square about ½ inch thick.
In a smaller bowl, mix the ketchup, olive oil, herbs, salt and pepper. Spread this ketchup mix on the surface of the rolled out dough.
Next spread the chopped tomatoes and lastly sprinkle the cheese on top.
Now roll this up to make a large log like roll with the ketchup and tomatoes peeping out a little.
Next, cut this log into thick spiral disks about 1 inch thick.
Line up these cut rolls on a non stick baking tray or a greased baking tray. Cover the tray with a cling film and leave it to rise for 30-40 min till the spirals double in size.
Pop the tray in a preheated oven at 200 degrees Celsius for 30 minutes till done. The spirals should sound hollow when tapped. Serve warm or cold with a hot soup!
