These muffins have been adapted from a recipe shared by my best friend, Bhavna’s, Mum- Ragini Mathur. I will be posting more adaptations of her excellent recipes soon- so do look forward to brownies, mocha devils cake, quick two egg cake and more bread spreads. Thank you Ragini Aunty!
1 cup whole wheat flour
50 g butter, melted and cooled
1 cup caster sugar (you can use diet sugar)
1/4 cup chocolate chips
1/4 cup cocoa
1/4 cup milk
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
– Mix all the dry ingredients- flour, sugar, cocoa, baking powder, baking soda, chocolate chips in a big bowl.
– In another bowl, beat the eggs well. Then add the cooled melted butter, vanilla extract, milk and mix well.
– Gradually mix the dry ingredients in the wet ingredients till well combined.
– Scoop out the batter in 12 cup cake liners in a muffin pan and bake for 30 mins at 180 degrees C till the top of the muffins spring back when pressed or a skewer inserted comes out clean.
– Serve warm.
