Low Cal Recipe: One Pan Chicken

Hello there! Last saturday evening, I was in my kitchen trying to figure out what to cook. The ingredients in front of me were – cubed, skinned, cleaned boneless chicken, red and yellow peppers and some potatoes. Thats when Nigella peeped into my head and I remembered her one pan chicken recipe. Now just for the record, I absolutely love the way Nigella loves cooking and also the fact that she is not a stickler for exact recipes. 🙂

So here is how I made the low calorie one pan chicken.

Ingredients:

400 – 450 g cubed, skinned, cleaned boneless chicken (You can also use chicken thighs and drumsticks, skinned. Remember to make two to three cuts on the chicken pieces, if using with bone)
3 yellow peppers, large chunks
3 red peppers, large chunks
3 medium sized potatoes, scrubbed clean and each potato cut into 8 pieces
1 tbsp olive oil
1 garlic bulb separated into cloves with the papery skin left as it is
2 tsp dried mixed herbs
salt and pepper to taste
1 tsp paprika

Method:

Mix all of the above ingredients in a large bowl and rub the oil and seasoning mix well on the chicken. Then transfer this to a large baking pan.

This is how the mixed ingredients appear before grilling

Put the tray in the oven on a grill mode for 30 mins or till the chicken is cooked and its juices run clear.

Other variations of this recipe are – adding butternut squash pieces or diced onion, a dribble of honey or a pinch of sugar to the dressing. And yes, it is also super yummy as a vegetarian version- welcome the paneer and the mushrooms. So go make it now!
